The Story Behind the Cheesesteak

From a hot dog cart in South Philly to the most iconic sandwich in America — and how Vito's carries the tradition forward.

1930

A Sandwich Is Born

Italian-American brothers Pat and Harry Olivieri ran a hot dog stand in South Philadelphia. One day, tired of eating their own hot dogs, they grilled thinly sliced beef with onions on a long roll. A passing cab driver offered to buy one — and never looked back. The steak sandwich was born, and the brothers never sold another hot dog.

1940

Pat's King of Steaks

The Olivieri brothers opened Pat's King of Steaks on Passyunk Avenue — the first restaurant dedicated entirely to the steak sandwich. Lines wrapped around the block. A Philadelphia legend was cemented in stone.

1952

The Cheese Changes Everything

The original sandwich had no cheese. In the early 1950s, provolone and American cheese started appearing on steaks. When Kraft introduced Cheez Whiz in 1952, the cheesesteak as we know it was complete. The great debate began: Whiz, provolone, or American? At Vito's, we let you choose — but provolone is the move.

1966

The Rivalry

Geno's Steaks opened directly across from Pat's on Passyunk Avenue, igniting the most famous food rivalry in America. Two corners, two legends, one sandwich. The cheesesteak became more than food — it became Philly's identity.

Today

Vito's Brings It South

That same tradition — premium ribeye, grilled thin on a flat-top, provolone melting over the edges, on a toasted roll — lives at Vito's Famous Cheesesteaks in Naples, Florida. We didn't reinvent the cheesesteak. We respect it. Every sandwich is built the way it was meant to be: fresh, fast, and unapologetically authentic.

What Makes a Real Cheesesteak

The Meat

Thinly sliced ribeye. Chopped and grilled on a flat-top until the edges crisp. Ribeye's fat marbling is what gives a cheesesteak its soul.

The Cheese

Provolone for the purists. American for the classics. Cheese sauce for the bold. At Vito's, every cheesesteak gets real cheese — melted right on the grill, not added as an afterthought.

The Roll

A real cheesesteak lives or dies by the bread. Crusty outside, soft inside, toasted to order. The roll has to hold everything together without falling apart or fighting the meat for attention.

The Griddle

A well-seasoned flat-top is the secret weapon. Decades of flavor built into the surface. At Vito's, every sandwich hits the same grill, the same way, every single time.
